- 1 pound sweet Italian sausage, chunked
- 1 pound hot italian sausage, chunked
- 1 pound sweet potatoes, unpeeled, cubed
- 1 pound red potatoes, unpeeled, cubed
- 1 pound red pepper , chunks
- 1 pound green onion, chunks
- 1 pound carrots, chunks
- 1 pound zucchini, thick slices
- 1 pound yellow squash, thick slices
- 1 large onion, sliced thick
- ½ head garlic, minced
- salt and pepper
1. Drizzle bottom of roasting pan with oil.
2. Combine all and bake at 350 for 1-2 hours.
3. Veggies should be caramelized at edges and sausage should be cooked throughout.
4. Cook covered with foil.
